This creamy rice pudding recipe only has a 20 minute prep time, allowing you to create a crowd-pleasing dessert in a limited amount of time. Start out by cooking the rice yourself for truly homemade rice pudding. Pour 1 cup of water into a medium saucepan over medium heat and add 3/4 cup of milk and 1/4 teaspoon of salt. Once the liquid is almost boiling, add 1/2 cup of Arborio or long-grain rice and 1 teaspoon of butter. For a creamier baked rice pudding, go for Arborio rice, which has a higher starch content. Stir the mixture and bring to a boil, then reduce the heat to very low and cover the pan. Simmer the easy rice pudding until it's thick and the liquid has almost evaporated, which should take between 25 to 30 minutes. Keep an eye on the rice toward the end of the cooking time so it doesn't burn, stirring it every five minutes. While the rice is finishing up, pour 1 cup of half and half into a small saucepan over medium heat. The vanilla flavoring is what's really going to give this rice pudding recipe a rich taste! Take half of a vanilla bean and slice it lengthwise, using a paring knife to scrape out the seeds. Add the seeds to the cream and heat it until it's just boiling. You can use vanilla extract, but this gets added later. Whisk together two egg yolks and 1/3 cup of sugar in a bowl, then gradually whisk in the heated half and half. Return this mixture back to the saucepan and stir constantly until it thickens. Pour this sauce over the cooked rice and stir together. This is where you would add 1 teaspoon of vanilla extract if you so choose. What's great about this rice pudding with cooked rice is you have the option to serve it warm or chill it for several hours and serve cold. Serve up the rice pudding in individual dishes and allow everyone to dress it up however they choose, whether that be by sprinkling it with cinnamon or topping it with fresh fruit!
